Ribeye Roast with Greek Dressing

Ingredients for Greek Dressing

  • ¼ cup extra-virgin olive oil
  • ¼ cup red wine vinegar,
  • ½ teaspoon garlic powder, ½ teaspoon dried oregano,
  • ½ teaspoons dried basil
  • ½ teaspoon fresh cracked black pepper,
  • ½ teaspoon Kosher salt,
  • ½ teaspoon onion powder,
  • ½ teaspoon Dijon mustard

Cooking Instructions - For 2 lb Ribeye Roast!

  1. Preheat oven to 375 degrees F.
  2. Combine all of the ingredients of the Greek Dressing together in a jar or bottle with a lid and shake well.
  3. Rinse the ribeye roast with cold water and pat dry with paper towels.
  4. Place the roast inside a 9×12 baking pan. Pour the Greek Dressing over the pork ribeye roast.
  5. Bake 1 ½ to 2 hours, depending on the size of the roast or until pork is done and runs clear juices.
  6. Place the roast on a carving board to rest 5 minutes, then slice and serve warm.
